Monday's Meal

Pasta Marinara w/Italian Veggies

1/2 c. Olive Oil
1/4 c. chopped onion
2 TBS. minced onion

Saute together until onions are clear.
Add:
1 tsp. each salt and sugar
1/2 tsp. pepper
1 TBS. dried basil
28 oz. can diced tomatoes
28 oz. can tomato puree

Stir and simmer for 15 minutes.

Italian Veggies (sauteed)

Red Peppers
Yellow Onion
Squash
Zucchini

Saute in a little bit of butter or olive oil.

Cook any type of noodles, add marinara and then top with veggies! So yummy.

***This sauce makes a ton, so you should be able to freeze half of it for quite awhile.
